Sushi Cookies [Video]

I made Sushi Cookies.

There are different types of sushi you can choose from at a Sushi restaurant. Today I’m going to show you how to make Nigiri and Makizushi (Maki, Sushi Roll) sushi cookies decorated with royal icing.

HOW TO DECORATE SUSHI COOKIES

To make cookies I used my Cut-Out Sugar Cookie Recipe. A I used card stock templates and a pen blade to cut out the cookies.

NIGIRI COOKIES

In today’s tutorial I’ll show you how to make Shrimp and Tuna Nigiri Sushi Cookies.

WHITE SPRINKLES

To make the rice you can use White Nonpareils or White Jimmies Sprinkles.

  • Nonpareils are basically tiny balls made with sugar and starch. They come in rainbow of colors.
  • Jimmies Sprinkles are tiny cylindrical shaped sprinkles that are used as edible decorations on desserts, donuts etc. I find these to be a little softer than nonpareils.

SHRIMP NIGIRI SUSHI

COLORS AND CONSISTENCY :

  • Light and Dark Salmon ( color icing with orange and add a little bit or red until you reach a desired salmon color shade) – 15 second consistency royal icing
  • White -15 second consistency

DECORATING STEPS :

Start by icing the bottom half of the sugar cookies with white 15 second consistency royal icing. Smooth the icing with a needle tool. And then right after turn the cookie upside down. And dip the iced section into the sprinkles.

Ice the top part with light salmon and immediately pipe a layer or dark salmon icing at the very top and flood tail. Blend light and dark salmon icing with a needle tool.

While base layer or icing is wet pipe lines across with dark salmon icing. Shape the icing with a needle tool.

TUNA NIGIRI SUSHI

COLOR AND CONSISTENCY :

  • White – 15 second consistency
  • Light and Deep Red (color icing with red and a minuscule amount of brown) – 15 second consistency

DECORATING STEPS :

Flood the bottom part of the cookies with white icing. Turn the cookie upside down and dip iced section into white sprinkles.

Ice the top with deep red and pipe some light red at the top. Blend the colors with a needle tool. While the base is wet pipe white lines across. Run a needle tool through the lines. This blends them in a little bit, making the design more realistic. Let icing dry.

SUSHI ROLL COOKIES (MAKI)

I made salmon, tuna and caviar royal icing decorations ahead of time.

ROYAL ICING TRANSFERS

COLORS AND CONSISTENCY :

  • Salmon (orange and red, or red and yellow and white), White, Leaf Green, Mint, Yellowish Avocado(yellow with a touch of avocado), Deep Red – 15 to 20 second consistency – to make salmon, tuna, and salmon with avocado royal icing transfers
  • Reddish Orange Color ( color icing with orange and a red), White – piping consistency – to make caviar

DECORATING STEPS :

Pipe all the decorations on a piece of wax paper.

Salmon and Tuna are both piped into oval shapes. Though salmon pieces are bit thinner than tuna ones.

While oval shapes are still wet pipe white lines across. On the salmon lengthwise and on tuna (deep red) across. Carefully run a needle tool through each white line. Let dry.

You can create different sushi filling combinations. When making salmon, avocado royal icing transfer be sure to let piped salmon crust before piping avocado.

Pipe avocado on the edge of salmon. First pipe a layer of leaf green, mint green and yellowish avocado. Use a needle tool to blend the colors. Let dry.

Make caviar in steps. Pipe the bottom with reddish orange and right after pipe white reflection dots. Let it crust and then pipe another layer of large dots with white reflections. Let dry.

You can also make one piece salmon, avocado and caviar decorations. Pipe salmon first, let it crust. Then make avocado and let it crust again. Finish with piping caviar. Let dry.

All royal icing decorations can be prepared ahead of time. Allow sufficient drying time before removing wax paper. Store royal icing transfers in an airtight container, for up to year.

ASSEMBLE SUSHI ROLL COOKIES

COLORS AND CONSISTENCY :

  • White, Black – 15 second consistency

DECORATING STEPS :

Outline and flood cookie with black 15 second consistency royal icing. Let icing dry. Then flood the top section with white icing. Place royal icing transfer : salmon, tune, caviar into the middle. Dust white with white sprinkles. Let dry.

CHOPSTICKS COOKIES

COLOR AND CONSISTENCY :

  • Black, Light Brown – 20 second consistency

DECORATING STEPS :

Ice black sections, let crust. After ice light brown sections. Use a needle tool to shape and distribute icing. Let dry.
