INGREDIENTS

  • All-purpose Flour
  • Baking Powder
  • Salt
  • Cinnamon (optional)
  • Powdered Sugar
  • Egg Yolk
  • Vanilla Extract/Vanilla Bean Paste
  • Cocoa Powder (natural or dutch-processed)
  • Instant Coffee or Espresso Powder
  • Hot water or milk

COOKIE DOUGH

  • Prepare the cookie dough. Follow the instructions in the recipe card at the bottom of this recipe post.
  • Roll the dough out to 1/4 inch thick (steps 1-2).
  • Slice the dough into 1-inch strips (steps 3-4).
  • Cut the strips into about 1/2-inch pieces (step 5).

SHAPE COOKIES

Shape each piece of dough into an egg/football shape. Keep the shaped cookie pieces covered to prevent them from drying out before the next step.

  • Fold a piece of foil into a thin strip.
  • Cut a small piece.
  • Shape it into ‘S’.

  • Use an S-shaped piece of folded foil to make the impression in the middle of each cookie.
  • Press the foil into the shaped cookie, about one-quarter of the way down.
  • Don’t cut all the way thru the cookie.

BAKE

Bake shaped cookies until puffy, about 7-9 minutes.

PACKAGING

Shaping

Shape pieces of dough into an egg/football shape.
Keep shaped cookies covered under a food wrap to prevent drying out.

Uniformity

Cut the rolled-out dough into evenly sized pieces so the cookie beans are about the same size.

Use ‘S’ Shape Tool

To create a signature coffee bean, use folded foil or a piece of paper in an ‘S’ shape. Be careful not to cut thru the whole cookie.
Make the S-shaped dents about 1/4 deep into the cookie.

Bake

It doesn’t take too long for the cookies to bake. Bake them just until they are well puffed up to avoid overbaking.

Ingredients

  • 1 cup all-purpose flour 140 grams
  • pinch salt
  • pinch baking powder
  • 1/8 tsp ground cinnamon optional
  • 1/3 cup unsalted butter at room temperature 72-75 grams
  • ½ cup powdered sugar 65 grams
  • 1 egg yolk
  • ½ tsp Vanilla Extract
  • 3 tbsp dark unsweetened cocoa powder 22 grams
  • 1 ½ tbsp hot water or milk
  • 1 tbsp instant coffee for more intense coffee flavor, use espresso powder
  • 1 tablespoon= 15 ml, 1 teaspoon is 5ml

Instructions

Cookie Dough

  • Preheat the oven to 340℉F (170℃).
  • Pour instant coffee or espresso powder (1 tablespoon) into a shallow dish with hot water or milk (1 tablespoon and ½ tablespoon). Allow to dissolve and let cool.
  • Into a bowl, add flour (1cup, 140 grams), salt (a pinch), baking powder (a pinch), and ground cinnamon (1/8 teaspoon).
  • In a bowl on medium-high speed, beat butter (1/3 cup, 72-75 grams) with powdered sugar (1/2 cup, 65 grams) with a hand-held mixer until creamy, about 2 minutes.
    Add 1 egg yolk and continue beating.
    Gradually beat in cooled dissolved coffee and Vanilla Extract (1/2 teaspoon).
    Sift cocoa powder (3 tablespoons, 22 grams) over the butter mixture and beat on medium-low speed until well combined. Scrape down the bowl.
  • Gradually in 2-3 additions, sift flour mixture over butter mixture. Beat on low speed until cookie dough starts to come together.
  • Gather dough into a disk.

Shape Coffee Beans

  • Roll it out to ¼ inch thick. Cut about 1-inch strips. And then cut each strip into ½ inch pieces.
  • In the palm of your hands, shape each little piece into a football-shaped cookie. Place it onto a baking sheet lined with parchment. While you are shaping the remaining cookies, cover the shaped pieces with a food wrap, so they don’t crust.
  • Make shallow cuts into each cookie. You can use a knife or fold a piece of aluminum foil, shape it into a “s” shape, and make the cuts into the shaped cookies. Don’t cut the cookies too deep.

Bake

  • Bake cookies for 7-9 minutes.
    Larger cookies will need extra baking time.
