Farmer’s Cheese Mousse with Dates
Farmer’s cheese mousse is my current obsession. It’s just farmer’s cheese blended with date paste (so naturally sweet!). And you can mix in a bit of cocoa powder if you’re craving chocolate. It’s so good!

FARMER’S CHEESE MOUSSE SWEETENED WITH DATES
I like to layer vanilla and chocolate mousse into glass cups and store them in the fridge. They stay good for up to a week. It’s the perfect thing to grab when I want something creamy and sweet without going overboard.

- I absolutely love that it keeps in the fridge for 5-7 days, covered. Usually, I make four servings, and it lasts me a week. I have one mousse cup every other day. It’s such a treat!

INGREDIENTS
- Farmer’s Cheese – how to make your own
- Plain Greek Yogurt (optional)
- Milk or water
- Date Paste – make the date paste using dry dates
- Vanilla Extract/Vanilla Bean Paste
- Dutch-Cocoa Powder
- Coffee Extract (optional)

- What is Farmer’s Cheese?
- I make farmer’s cheese at least twice a month. It keeps really well in the fridge for up to 2 weeks.
- I use it in both sweet and savory dishes, as well as in baking.
- Farmer’s cheese is the easiest cheese you will ever make.
- It’s a curd cheese, and all you need is milk and an acidic ingredient, such as vinegar or freshly squeezed lemon juice.
- How to make farmer’s cheese at home step-by-step
- What is Date Paste?
- Date paste is made by soaking dry dates in boiling liquid and then blending them until a smooth paste is formed.
- If you don’t have date paste on hand, you can easily make this recipe using just dry dates.
- Soak 8 dry dates in 1/3 cup boiling water for 10 minutes. Blend them into the cheese with milk and yogurt.

VANILLA MOUSSE
- I have made this recipe using a chopper food processor and also an immersion blender. All of these will work to make this smooth and velvety silky mousse.
- Basically, we have to blend all the ingredients.
- Blend farmer’s cheese with milk and plain yogurt until smooth (steps 1-5).
- Add date paste and vanilla extract or vanilla bean paste. Blend until smooth (steps 6-7).
- Spoon about 1/2 of the vanilla mousse into a piping bag or into a bowl.

CHOCOLATE MOUSSE
- If you are craving some chocolate, use good-quality cocoa powder.
- Add sifted cocoa to remaining mouse and blend until thoroughly combined (steps 1-4).
- You can also add extra flavorings, such as coffee extract (optional).
- Taste and add more date paste as desired (steps 5-8).

FILL THE DESSERT CUPS
- Spoon vanilla and chocolate mousse into piping bags.
- To evenly distribute both mousses into serving dishes, weigh each mousse and divide the measurement by four.

- Spoon or pipe chocolate and vanilla mousse into each glass

STORAGE
Cover each glass and store the mousse cups in the fridge for up to 7 days.

FARMER’S CHEESE MOUSSE SUCCESS TIPS.
Be sure to use dense farmer’s cheese. If your cheese is very soft, add only a small amount of milk or skip it entirely and blend just until smooth but still thick,
This mousse is not very sweet. You can up the date paste amount and make it a bit sweeter.

Yes, you can choose either of those. Depending on how thick these are, start blending without the milk or use a very little to maintain a thick consistency.

Farmer’s Cheese Date Mousse Cups
Equipment
- food processor/chopper/immersion blender
Ingredients
- 2 cups farmer's cheese, medium to firm consistency 400 grams
- 1/3-1/2 cup milk 80-125 ml
- 1/2 cup Greek yogurt/plain thick 125 grams
- 1/4-1/3 cup date paste 95 grams-126 grams (see note if you don't have date paste on hand)
- 1 tsp Vanilla Extract
- 2 tbsp Dutch-cocoa 13 grams
- 1/2 tsp coffee extract (optional)
Instructions
Vanilla Cheese Mousse
- In a food processor, immersion blender, or chopper, blend 2 cups (400 g) of farmer’s cheese, ½ cup (125 ml) milk, ½ cup (125 g) thick plain yogurt until smooth.
- Add 1/4 cup date paste and 1 teaspoon Vanilla Extract or Vanilla Bean Paste. Blend until combined and smooth.Take about half of the mixture and set it aside in a bowl or a piping bag
Chocolate Mousse
- To the remaining vanilla mousse, add 2 tablespoons (13 g) sifted cocoa powder and, if desired, ½ teaspoon coffee extract. Blend until smooth, then taste and mix in the remaining two tablespoons of date paste, if needed.Layer the chocolate mousse on top of the vanilla mousse layer, into the cups.
- Serve, or cover and refrigerate for up to 5-7 days.
Serving Suggestion (optional)
- Grate some chocolate and sprinkle it over the mousse. Top the mousse with raspberries.
