I “spring forwarded” my clock this morning, it is 7:30am. It feels great having Spring in the air.
Few days ago I started my walking / running routine, on most days I try to do around 5 miles if I can.
It feels great.
I’m hoping to go for a walk around 9am, it is a great way to start a day. Though I don’t have time every day, Sundays I try to make time. I prefer running but my knees don’t always agree with me so I’m a light jogger, walker. I discovered a new route yesterday, it was so peaceful and there were flowers growing along the road. I saw first snow drops. Only a little bunch, they made me stop though. Is it wrong I wanted to pick them, and put them in a small vase by my kitchen window?
Well I didn’t but I wanted to.:-)
I like coleslaw salad, I make it with simple vinaigrette alone or I also add greek yogurt.It is so refreshing!
I love greek yogurt, it is creamy and low in calories and I found a way to use it in savory dishes as well as desserts.Wait till I start making those, I’ll be sure to share them with you this Summer.
Last night I decided to make coleslaw salad with roasted turkey ham, eggs and almonds.
Delicious.
Coleslaw with Greek Yogurt Dressing
4 cups of coleslaw, I used a mixed variety
4-5 slices thinly sliced turkey ham, chopped into squares
3tbl chopped almonds
2tbl dry cherries or raisins(optional)
2 cooked eggs, diced using a egg slicerDressing:
1cup fat free greek yogurt
1tbl finely chopped onion
1 glove of garlic, minced
1tbl freshly chopped parsley
Juice and lemon zest of 1/2 lemon
honey, salt and pepper to taste
1/2tsp dijon mustard
In a medium bowl, combine yogurt, onion, garlic, parsley, mustard, season with lemon juice, lemon zest, salt pepper and honey. Stir until combined, taste and season more if desired.
I prefer my salad to have a sour sweet kick
Combine coleslaw with chopped ham, almonds, cherries or raisins if using, add the dressing, and stir until well combined, once well combined add eggs, and gently fold in.
Chill for about an hours and serve with a piece of bread or alone.
I'm going to forward your recipe to my mother in law as she was just saying yesterday that she loves coleslaw. Great job on your new light jogging routine and finding a new route.
