Coleslaw with Greek Yogurt Dressing
It feels great.
Well I didn’t but I wanted to.:-)
I love greek yogurt, it is creamy and low in calories and I found a way to use it in savory dishes as well as desserts.Wait till I start making those, I’ll be sure to share them with you this Summer.
4 cups of coleslaw, I used a mixed variety
4-5 slices thinly sliced turkey ham, chopped into squares
3tbl chopped almonds
2tbl dry cherries or raisins(optional)
2 cooked eggs, diced using a egg slicerDressing:
In a medium bowl, combine yogurt, onion, garlic, parsley, mustard, season with lemon juice, lemon zest, salt pepper and honey. Stir until combined, taste and season more if desired.
I prefer my salad to have a sour sweet kick
Combine coleslaw with chopped ham, almonds, cherries or raisins if using, add the dressing, and stir until well combined, once well combined add eggs, and gently fold in.
Chill for about an hours and serve with a piece of bread or alone.

I'm going to forward your recipe to my mother in law as she was just saying yesterday that she loves coleslaw. Great job on your new light jogging routine and finding a new route.
