Minecraft Cake, Enderman & Piggie
If you remember I mentioned a Minecraft Cake in my previous post Mine Craft Dirt Blocks Rice Krispies. Today I wanted to show you the finished cake. I used Rice Krispies to decorate the top and I also captured the whole process on the video so you see how it was made from the start to finish.

- Preheat oven 350F
Butter and flour your baking pan. Line the bottom with parchment paper

In a medium bowl sift together flour salt and baking powder, set aside.

In a clean bowl, whip egg whites with a pinch of salt, once soft peaks are formed, gradually add 1/2 of the sugar, whip until shiny and stiff peaks are formed. Don’t whip it too long though, you want the egg whites to retain moisture, turn the mixer off at once when stiff peaks are formed.

Scrape the whipped egg whites into another bowl. Set aside.

Put all the egg yolks into the mixing bowl you just used for making the meringue. It is okay, it doesn’t have to be spotless. Add remaining sugar to the egg yolks, using same wire whip attachment, mix the egg yolks, first at medium speed and then at high speed, once your egg yolks have doubled in volume and became pale in color, add oil, by tablespoon, mixing well after each addition, then add warm water, by tablespoon, mixing well after each addition. Add vanilla extract and beat until combined. Turn of the mixer.

Using fine mesh strainer sift about 1/3 of flour into the egg yolk mixture and carefully fold the flour in with a spatula, then add about 1/3 of whipped egg white mixture and fold in. Continue with rest of the flour and whipped egg whites, until no streaks are visible. Be gentle and don’t over mix. You are looking for a light and airy batter.

In a large bowl of your mixer, sift together flour, sugar, cocoa powder, baking powder, baking soda and salt.
Mix on low speed for 30 second until ingredients are well combined. -
In a medium size bowl, using a fork combine together buttermilk, oil, eggs, vanilla extract.

Add wet ingredients into the dry ingredients, mix the batter for 5 minutes on low speed.
Then add boiling water and mix on low speed just until batter comes together, Batter will be thin. -

Pour the batter into a prepared pan, bake for 35-40 minutes, or until toothpick comes out clean.

Let cool cake in the pan, then carefully invert the cake onto cutting board, store wrapped in plastic wrap in the fridge until ready to use.
Simple Syrup for the cake
1cup granulated sugar
2cups water
juice of 1/2 lemon, strained(optional)
1tsp vanilla extract
- In a small sauce pan bring water, lemon juice and sugar to boil, reduce heat and simmer for 5 minutes, until all the sugar has dissolved.
- Let cool and then add vanilla extract.
- Store in the airtight container in the fridge.
- Brush sparingly onto the cake from both sides to keep the cake moist.
