Cranberry Nut Granola

I’ve been making lots of granola lately, my local farmer’s market sells the most delicious dry fruits so I bought lots of cranberries for biscotti(my favorite recipe) and granola.
Granola is super easy to make, and while baking delicious aroma escapes the oven  leaving the house smelling nutty. It takes about an hour or a bit more to bake, just make sure you keep an eye on it while in the oven, it is best to stir it occasionally to make sure it toasts evenly. If you find that mixture is too wet, bake it for little longer. Today we are making Cranberry nut Granola.

Cranberry Nut Granola
3 cups old fashion oats
1/4 cup sunflower seeds
1/4cup pumpkin seeds
1/2 cup blanched and chopped almonds(they don’t have to be blanched)
2tsp cinnamon
1/2 cup honey or maple syrup
1/3cup brown sugar
1/2cup unsweetened cranberry juice
1/4tsp fine sea salt
zest of one orange(optional)
1cup dried cranberries

Preheat oven  to 350F
Line the baking sheet with aluminum foil and  evenly spread  pumpkin seeds, sunflower seeds and almonds, toast   for 8 to 10 minutes. Remove from oven and let cool.
Lower oven’s setting to 250F
In a sauce pan  combine together honey, sugar, cranberry juice and cinnamon, cook on medium heat until all the sugar has dissolved, keep stirring. Remove from the heat and set aside.
In the medium bowl combine oats, almonds, pumpkin and sunflower seeds,orange zest and salt.
To the dry ingredients add wet mixture and  stir until all dry ingredients are well coated. Spread the mixture onto the 2 baking sheets lined with aluminum foil and lightly brushed with olive oil or sprayed with nonstick spray. Cook for 1 hour and 10 minutes, stirring every 15 minutes for even color.
Remove from the oven and transfer granola to a large bowl, add cranberries and stir till evenly distributed. Let cool and store in glass jars for later use.

Part of your Morning cereal, just sprinkle some on your favorite cereal
Perfect for gift giving, simply fill a mason jar with homemade granola, tie a pretty ribbon around, attach a gift tag.
