Fresh Vegetable Pasta Salad
2tbl olive oil
- Marinade Asparagus : In a small dish combine melted butter, fresh basil, season with salt and pepper, pour mixture over asparagus pieces and coat the asparagus evenly with butter marinade, let sit for 20 minutes
- Meanwhile, separate broccoli florets and steam the broccoli with a touch of olive oil and salt, steam only until knife tender, this will take only several minutes. While broccoli is steaming prepare a bowl with ice cold water, once broccoli is done- immediately submerge broccoli florets into the cold water to stop the cooking process, drain and set aside
- Saute marinated asparagus in the skillet with 1tsp olive oil until fork tender but still crunchy, stir occasionally, this will take only several minutes as well
- Once you have all your veggies cooked and prepared and sliced you are ready to combine all the ingredients to make a delicious and refreshing salad
- In a large bowl : add cooked and slightly cooled al dente pasta, add cooked asparagus with all the remaining juices, broccoli, whole can of corn, sliced radishes, peaches, stir to combine
- In a small dish combine lemon juice, olive oil and honey, add touch of salt and pepper and pour the mixture over pasta, stir well, set aside for 10 minutes
- Just before serving distribute quartered hard boiled eggs on the top and enjoy
- This is a really delicious and easy salad to make, peaches add a new unexpected flavor.
