Fresh Vegetable Pasta Salad

Pasta is one of my favorite things, with some melted butter and Parmesan sprinkled on the top, or with fresh cherry tomatoes, pasta dishes have endless possibilities  and just  in case you have more veggies on hand you can make a mixed salad like the one in the picture. It is quite easy to make and tastes delicious.
Fresh Vegetable Pasta Salad

 
1pound asparagus, cut into 1/2 to1 inch pieces
1 large broccoli head
1can whole corn
4tbl butter, melted
salt, pepper to season
1tbl fresh basil
3radishes, thinly sliced
4-6 halved canned peaches, sliced
3eggs, hard boiled, quartered
1/4cup Parmesan cheese 
juice if 1/2 to 1 whole lemon(don’t have lemon? use white rice vinegar or white wine vinegar instead)
2tbl olive oil
1tsp honey
medium pasta shells, cooked al dente*, about 5 cups cooked pasta
 
*Al Dente – pasta is fully cooked but is not overly soft, follow the direction on the pasta box, usually there is stated how long to cook the paste of al dente results
 
 
 
  • Marinade Asparagus : In a small dish combine melted butter, fresh basil, season with salt and pepper, pour mixture over asparagus pieces and coat the asparagus evenly with butter marinade, let sit for 20 minutes
  • Meanwhile, separate broccoli florets and steam the broccoli  with a touch of olive oil and salt, steam only until knife tender, this will take only several minutes. While broccoli is steaming prepare a bowl with ice cold water, once broccoli is done- immediately submerge broccoli florets into the cold water to stop the cooking process, drain and set aside
  • Saute marinated asparagus in the skillet with 1tsp olive oil until fork tender but still crunchy, stir occasionally, this will take only several minutes as well
  • Once you have all your veggies cooked and prepared and sliced  you are ready to combine all the ingredients to make a delicious and refreshing salad
  • In a large bowl : add cooked and slightly cooled al dente pasta, add cooked asparagus with all the remaining juices, broccoli, whole can of corn, sliced radishes, peaches, stir to combine
  • In a small dish combine lemon juice, olive oil and honey, add touch of salt and pepper and pour the mixture over pasta, stir well, set aside for 10 minutes
  • Just before serving distribute quartered hard boiled eggs on the top and enjoy
  • This is a really delicious and easy salad to make, peaches add a new unexpected flavor.
