I’m so excited to share this delicious casserole recipe with you today. It’s a winner in taste and ease of preparation.
Layered Casserole with Pasta and Ground Pork
1 box of Barilla ® Organic Pasta Penne
2 jars of Barilla ® Pasta Sauce
1lb ground pork
1/2 cup chicken broth
1 large red pepper, diced
2 – 15 oz cans pinto bean(one can is 15oz), rinsed
1- 15 oz can corn
1 1/2 shredded cheese, I used mozzarella
1 large red pepper, diced
1 large onion, finely diced
3 garlic cloves, pressed
2tbl olive oil
1tsp cumin
1/2 tsp ground coriander
pepper and salt
1tsp Chili powder(optional), add with spices
2 scallion bunches, cut on bias
Cook pasta, set aside.
Heat 1tbl olive oil, saute onion, add pressed garlic, work in ground pork, season with salt and black pepper. Cook until meat is no longer pink. Then add red pepper, cook for 2 minutes, season with cumin, coriander, then add chicken broth, 2 jars of marinara sauce. Cook on medium high. Sauce should be simmering, cook until reduced in volume 10 minutes.
Layer in a 9×13 casserole dish : pasta, pork sauce, beans, cheese, corn.
Cover with foil.
Bake at 350F for 65 minutes.
Remove from the oven, sprinkle with scallions. Let rest for 20 minutes. Serve.
