Grilled Apple Peanut Butter Sandwich

 

I wanted to make this sandwich for a while and today was a the day, I needed a good energy boost and this delicious sandwich really stepped up to the plate.  Filled with great flavors, it is a super easy fix and I can totally see this one to be favorite with  the kids too.
I have to admit I don’t eat regular square sandwich bread, I love rustic bread so that is what I used, yummy French Bread, (not that it came from France, but that is what the label says); it is really up to you what type of bread you’ll use, just make sure you like it, that is all I ask for.
 
 Grilled Apple Peanut Butter Sandwich (4 medium sandwiches)
1 Large Apple -.peeled, cored and sliced to medium size slices
1/2tsp ground cinnamon
2tbl unsalted butter
1-2 tbl brown sugar
creamy peanut butter
sandwich bread or other type you like
 
 
 
 
– Melt butter in a medium skillet, add cinnamon and brown sugar, add apples, using a spatula gently stir 
 
-Turn up the heat to high and cook apples, watch carefully so they don’t burn, you are looking for a lightly golden color, just for about 3-4 minutes.
-Remove apples from the pan, leaving the remaining sauce in the pan, let  apples cool slightly.
 
-Reduce heat to medium and fry bread in the pan you used to make apples, about 1 minute  on each side (or you if you are in a hurry you can also toast the bread in the toaster and pour some of the remaining sauce on the  the bread) Remove butter from the pan and let cool for a minute
 
 Assembly
Spread peanut butter on the bread and layer slightly cooled apples on the top.
Place sandwich top on the top and enjoy.
If using a rustic type of a bread like I did, you might want to skip on sandwich top, i found it hard to bite through both. (note:Regular sandwich bread is really soft compare to crusty bread)
 
These were so good. Pretty healthy choice for an afternoon snack, plus I love anything with cinnamon. My favorite spice of all.
