Banana Cookie Sandwich Bites

When I’m in the hurry I make Banana Cookie Sandwiches, they are so easy, everyone loves them, especially kids though. Banana is one of my favorite fruit, as I have mentioned several times already.I often make these for New Year’s Eve;after a long marathon of baking and cooking during holidays these as they are not baked come together really fast. They require minimum amount of ingredients and time to make. Longer you let them sit, moister the cookies becomes.

Banana Cookie Sandwich Bites
1 banana
20 + Mini Nilla Wafers
1cup Dipping Chocolate, Merckens Dark Wafers
Toothpicks

Melt the dipping chocolate
Peel and slice the banana into about 1/2 inch slices
Sandwich banana slices between 2 nilla wafers, secure in place with a toothpick
Dip in chocolate, turn the sandwich in the chocolate gently until sides and bottom are coated, gently shake of the excess
Place all dipped sandwiches onto a tray lined with wax paper
Put the sandwiches into the fridge, let the chocolate harden
Enjoy.
