Harvesting Lavender : Lavender flowers are picked like fruit, pick those that look almost perfect, with the fullest color, it will ensure the best flavor. Just like with fruit – fresh fruit always tastes better, same applies to lavender, fresher the flower more flavorful the taste.All blooms need to be well rinsed, immerse them in water to remove any soil or insects, then gently lay flowers on the towel, until you are ready to use them in your meal. When using in cooking, if you can’t get fresh lavender you can still use dry culinary lavender. Remember dry lavender has concentrated flavor so use 1/3 quantity of fresh one.
At he Lavender Gift Shop they are selling all kinds of goodies and I was really pleased to see that they also make their own lavender honey, I will have get some on my next visit.
To the right /middle shelf/ is culinary lavender. They even had some lavender chocolate and lip balm.

Sometimes the good things are sitting right in front of our nose. I’ve driven by this farm many times …and only now I have discovered its beauty.
