Caramel Coffee Hazelnut Granola

 It is official, I’m a granola addict. I eat oats in every possible form, ground, whole, cooked, baked, so why now soaked in coffee and caramel, right? I bought micro marshmallows and added some for more vibrant color and different texture, knowing  I can’t go without chocolate for too long, there goes 1 cup of mini chocolate chips..straight into the oat mixture.


Caramel Coffee Hazelnut Granola
2cups oats
1/2cup  hazelnuts, chopped roughly
1/2 cup sunflower seeds
1 cup mini chocolate chips
1 cup micro marshmallows
6tbl  granulated sugar
3tbl honey

1/2 water
1 1/2 tbl espresso powder
1tsp cinnamon
2tbl vegetable oil

Preheat oven to 250F
In a medium bowl combine dry ingredients: oats and nuts
Dissolve espresso in 1/2 cup water. Make caramel: in a medium size sauce pan cook sugar until it reaches amber color. Add water with espresso. Caramel will sizzle and harden, cook until it dissolves, add cinnamon and honey, boil for 3 minutes. Remove from heat, add vegetable oil.
Pour mixture over oat and nuts, and stir until well coated.
Spread the mixture onto a baking sheet that you lined with aluminum foil and bake for about 45-60 minutes, stirring every 15 minutes. Once done let cool until lukewarm then add chocolate chips, stir well.Let cool completely and add marshmallows. Enjoy.
