Today I’m making delicious Apple Dessert.
Apple Cream Cheese Meringue Cakes(can be made as a sheet cake style, makes 12 small cakes/cupcakes)
10tbl room temperature butter, unsalted
1/2 cup room temperature milk
1 3/4 cup all purpose flour
1tsp baking powder
1/4 tsp salt
1/2 cup to 3/4 cup granulated sugar
pinch of salt
Cream Cheese Filling
1/2 cup cream cheese
1/2 cup powdered sugar, use more as desired
1/2 tsp vanilla extract
sugar to taste
freshly squeezed lemon juice from 1/2 of the lemon
Preheat oven to 375F. Spray silicone cups with non stick spray, place cups on the baking sheet, set side.
Prepare apple filling : shred apples, season with cinnamon, sugar and lemon juice. Add sugar to taste. Set aside.
Prepare cream cheese filling : beat cream cheese until creamy, add powdered sugar, beat in vanilla and egg, set aside.
Prepare cake batter : Cream butter, add powdered sugar, gradually add egg yolks, beat in vanilla.
Whisk together flour, baking powder and salt. Then alternatively add flour mix and milk into the butter egg yolk mixture.
Fill the cakes or alternatively use a jelly roll or a square pan to make the cake.
Layer cake batter, cream cheese filling, apple filling, topping the cakes with cake batter.
Bake at 375F for 20-22 minutes.
5 minutes before you take the cakes out of the oven make the meringue: beat egg whites with a pinch of salt, granulated sugar over a pot with simmering water. Beat until meringue is glossy and thick and holds the peak. Take the cakes out of the oven and pipe a meringue swirl on the top of the hot cakes, return to the oven and baked until meringue is golden brown.
