Salmon Spread

Fish, usually Sardine Spread was a staple in the kitchen when I was growing up. I’d say my mom made it at least once as week, usually thickly spread on a piece of  good bread, served with cut up tomatoes. I bought a can of wild Salmon few weeks ago with a plan to make a similar spread my mom made us. I mixed the whole salmon from the can with some of my favorite things then I spread it on pieces of cut up fresh cucumber. What a delightful combination of flavors.

1 can Alaska Wild Salmon
1/4cup chopped chives
1/4 cup chopped scallions
1/4 cup  roughly chopped pepper in oil, I use my own pickled peppers in oil, but you can easily get the ones you like in the store, or use roasted peppers instead-make sure you cool them before stirring in

1/2 cup cream cheese
1/4 cup butter
salt, pepper to taste

  •  In a medium size bowl, using a fork or your fingers break up the salmon into small pieces, crush the bones and all, they are good for you too.
  • Add softened butter and cream cheese, and stir well, you could also do this in the food processor.
  • Add chives, scallions, pepper, season to taste.(If using food processor, remove salmon butter cream cheese mixture into a bowl before stirring in scallions, pepper and chives)
  • Let chill for 20 minutes, and enjoy
