Ingredients
STRAWBERRY SHORTCAKE WHOOPIE PIES
WHOOPIE PIE BATTER
1cupall purpose flour
1/4cupcorn starch
1/2tspbaking powder
1/4tspsalt
1/4cuproom temperature butter
1/3cupgranulated sugar
1/2cupbuttermilk
1egg
1tspVanilla Extract
FILLING
1/2cup package of cream cheese (about 1/2 package)
1/2 - 2/3cuppowdered sugar
1/4cupwhipping cream or heavy cream
1/2tspvanilla
STRAWBERRIES
5 large strawberries, washed and sliced
Instructions
WHOOPIE PIE BATTER
Preheat oven to 350F. Spray a whoopie pie pan with non stick spray.
In a medium size bowl whisk together flour (1cup), corn starch (1/4 cup), baking powder (1/2tsp) and salt (1/4tsp). Set aside.
In a small dish whisk together egg (1 egg) with Vanilla Extract (1tsp).
Beat unsalted, room temperature butter (1/4 cup) with granulated sugar (1/3cup) until creamy, pale in color and doubled in volume. Then into the butter sugar mixture gradually beat in egg mixture.
Then into the butter egg mixture gradually on low speed beat in flour mixture alternating with buttermilk (1/2 cup). Pour mixture into a large piping bag.
TIP : How to Make Buttermilk : pour 1/2 tbsp vinegar or freshly squeezed lemon juice into a 1/2 cup measure, top it off with room temperature milk, let sit 5 minutes and stir.
ROSE WHOOPIE PIES
Color Batter
Into 3 small bowls spoon whoopie pie batter, Into 2 bowls, into each bowl spoon 2 tablespoons of whoopie pie batter. And into 3rd small bowl spoon 1 tbsp of whoopie pie batter. You should have 3 bowls.
Color batter in 2 small bowl (with 2 tbsp of batter) with pink gel food coloring, Making one batter darker shade pink than the other.Then color batter in 3rd bowl (with 1 tbsp of batter) with green gel food coloring.Spoon each batter into a small sandwich bag or a piping bag.
Pipe Roses
Pipe batter into a prepared whoopie pie pan. Smooth the tops with back of the spoon dipped in water.
Then pipe rose pattern on 6 of the cakes - refer to the video/step by step tutorial in the blog post for how to do this step. You should have 6 plain cake and 6 with rose pattern on the top.
BAKE WHOOPIE PIES
Bake at 350F. Bake for 10-12 minutes. Remove from the oven and let cool for 5 minute in the pan. Then remove each little cake and transfer it onto a cooling rack. Allow to cool completely.TIP: Use a small flexible silicone spatula to help remove the cakes from a whoopie pie pan.
CREAM CHEESE FILLING
Beat cream cheese (1/2 cup, 1/2 of the package), until smooth, add powdered sugar (1/2 cup to 1/3 cup, depends on how sweet you like it.) Beat until homogeneous, smooth and creamy. Then gradually beat in whipping cream (1/4 cup) and Vanilla Extract (1/2tsp). Fit a large piping bag with a star piping tip and spoon the cream cheese filling into the bag. Tie the bag with a rubber band or twist it well as needed.
STRAWBERRY SHORTCAKE WHOOPIE PIES ASEEMBLY
Pipe a swirl layer of cream cheese filling onto the cakes with no pattern. Then arrange sliced strawberries on the top. Place and gently press the top cake round with a rose pattern onto the filling.TIP : For an faster assembly you chop strawberries and fold them into the cream cheese filling. It might not be as pretty but it's a bit easier and fuss-free.
