Apple Compote

Today I’ve prepared something really easy to put together.I’ve been working a cake this evening, and so I only had  few minutes to spare for my Apple a Day project. Apple Compote takes literally minutes to make and yet is very rewarding.
Enjoy.

Apple Compote
2 tart apples
1/4 brown sugar ( you can also use honey)
1 tbl butter
1/8 cup orange or limonicello liqueur
1 tsp cinnamon
2tsp corn stach
juice of half of lemon
1/2 cup water

In a medium bowl, combine water, lemon juice and liqueur.
Peel, core and dice apples, place them into the lemon water, let stand for 2 minutes and strain apples, reserving the lemon water.
In the medium size sauce pan, melt the butter, add brown sugar and apples, cinnamon and 3/4 of lemon water, reserving the rest.
Bring the apple mixture to boil, lower heat to medium and cook

apples  till they get soft, in the meantime mix 2tsp corn starch with reserved lemon water, stir, apple mixture will  thicken immediately. You are looking for syrupy consistency, if you see that sauce is too thick, add a little water, and bring to boil again. Stir and cook for about 2 minutes. Remove from heat and serve.
