I  needed edible magical unicorn in my life and I made these adorable Unicorn Apple Pie Pop Tarts.

For the  Dough  (makes 9, 3x3inch pop tarts)
STEP BY STEP VIDEO TUTORIAL
2cups all purpose flour
1/4 cups sugar
1/2 tsp salt
10tbl unsalted chilled, cubed butter
2 egg yolks
1/4cup chilled milk, or water
1/2tsp vanilla extract
In the food processor : process  flour, sugar and salt for 10 seconds.  In a small dish whisk together milk, egg yolks, vanilla.  Through the feed tube add butter to the flour mix and pulse, approximately 10 times, until butter is the size of peas.  Gradually add milk mixture and pulse until dough starts to come together. Gather the dough into a ball, flatten it to shape a disk. Wrap in plastic wrap and chill for 2 hours.
For the Filling
2cups dices, peeled, washed apples
juice of half lemon
lemon zest of half lemon
1/4cup sugar
1tsp cinnamon
1/4tsp freshly zested nutmeg
3tbl flour

Combine all the ingredients except flour in a small sauce pan. Cook on medium heat, until apples are soft. Remove them the heat and let cool to room temperature. Stir in flour and use as the filling.
Bake pop tarts at 400F until golden brown around the edges, about 18-20 minutes.
