HOW TO MAKE MONSTER EYE SURPRISE INSIDE CAKE FOR HALLOWEEN

Surprise Inside Cakes have been around for a while. I first saw them years ago over at I am Baker. Being super slow at following trends it took me a while to warm up to the idea.

Then out of nowhere I had this idea for a cool eye surprise inside cake. And I immediately jumped on a fast moving surprise inside cake trend. This cake is perfect for Halloween.

To make it I used my Vanilla Pound Cake Recipe. And to decorate I whipped up Swiss Buttercream. If you are not a fan of meringue buttercream you can use Colored Whipped Cream. It’s super easy and fast to make and tastes delicious with pound cake.

Let me show you how to make this colorful Halloween Surprise Inside Cake!

CAKE BATTER

Preheat oven to 330 F. Spray a rimmed baking sheet/pan (12×9 inch) with a nonstick spray and line it with a parchment paper.

First I prepared pound cake batter (recipe in the recipe card below). Then I divided the cake batter in half. To make eyeball veins I used sprinkles. Fold 1/4 cup of white/red jimmy sprinkles into 1st half of the cake batter. Red/White Jimmies work perfectly, they look like little veins in the eyes.

Divide 2nd half of the batter into 1/3 and 2/3. Color 2/3 of the batter with electric green gel food color. And remaining 1/3 of cake batter with black food coloring.

Spread batter with sprinkles into a prepared baking sheet covering about 2/3 of the rimmed baking sheet (12x9inch). Then spread green batter covering about 2/3 of the remaining area. Then spread black cake batter into the unfilled area of the baking pan.

Bake in the preheated oven at 330F for 18-22 minutes, or until toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 5 minutes. Turn it out onto a work surface lined with wax paper. Let cool. Turn the cake again and peel off the wax paper.

SHAPE MONSTER EYE CAKE ROUNDS

Use 3 round cutters : 2 inch, 3/4 inch and 3/8 inch to cut out pieces of cooled cake batter.

First cut out rounds with a 2 inch cutter from the cake with sprinkles. Transfer rounds onto a freezer safe tray lined with wax paper. Then with a smaller cutter (3/4 inch) cut out rounds from the bright green cake. Using the same cutter (3/4 inch) cut out centers out of the cake rounds with sprinkles. Replace them with green cut out cakes. Gently press green cakes into the cavity.

Lastly, using the smallest round cutter (3/8 inch) cut out black cake sections. They will look like long cylinders. Using the same cutter (3/8 inch) cut out centers from the green rounds. Replace them with black cake cut outs.

I used a wooden spoon to push the black cylinder cakes out of the cutter and into the cavity of the green cakes.

Freeze monster eye cake rounds for 2-4 hours until frozen solid.

LOAF PAN CAKE

Spray and lined a loaf pan with parchment. Preheat oven to 330F. Then prepare second cake batter and color it with electric purple food coloring. I usually use sky blue and electric pink colors to mix purple.

Take frozen eye round cakes out of the freezer. Press frozen monster eye cakes into a log. Spread about 1/4 to 1/3 of the purple cake batter on the bottom of the loaf pan. Place a cake log shaped from eye cakes onto the purple cake batter. Cover with remaining purple cake batter.

Bake in the preheated oven at 330F for 60 to 75 minutes, or until toothpick inserted in the center comes out clean. If cake is browning too much cover it with a foil dome sprayed with a nonstick spray.

Let the cake cool in the pan for 10 minutes. Then lift the cake out and transfer it onto the cooling rack. Let cool completely.

Trim the sides if needed before frosting.

DECORATE MONSTER EYE SURPRISE CAKE WITH BUTTERCREAM

Crumb-coat the cake with buttercream. Refrigerate until firm. Then frost the cake with orange buttercream. Use a cake decorating spatula to smooth the buttercream and create texture. Alternatively you can use a grass piping tip.

Pipe white eyes onto the cake. And to make the pupils use edible black pearls. Refrigerate for up to 4 days covered. Let come to room temperature before serving.

Ingredients

Monster Eye Cake Rounds – Cake Batter

  • 1/2 cup unsalted butter at room temperature
  • 1 1/2 cup granulated sugar
  • 3 large eggs at room temperature
  • 1/2 cup full fat sour cream at room temperature
  • 1 tsp Vanilla Extract
  • 1/4 tsp Almond Extract (optional, use Vanilla if not using)
  • 1/4 tsp Lemon Extract (optional, use Vanilla if not using)
  • 1 1/2 cup cake flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Monster Eye Cake Rounds – Food Colors and Sprinkles

  • 1/4 cup White/Red Jimmy Sprinkles
  • Americolor Electric Green Gel Color
  • Americolor Super Black Gel Color

Purple Cake Batter – use recipe for Monster Eye Cake Round Batter

  • Electric Purple or I use Americolor Electric Pink and Americolor Sky Blue Gel Color to make Purple

Instructions

Monster Eye Cake Rounds – Cake Batter

  • Prepare a rimmed baking sheet/pan 12x9inch. Spray it with a nonstick spray and line it with parchment paper. Set aside.
  • Preheat oven 340F.
  • Into a bowl sift together cake flour (1cup and 1/2cup), baking powder (1/2tsp) and salt (1/4tsp). Set aside.
  • In a medium bowl whisk together large eggs (3) and Vanilla (1tsp), Almond (1/4tsp), Lemon Extracts (1/4tsp). Set aside.
  • On medium speed, with a stand mixer using a paddle attachment cream butter (1/2cup, 1stick,113grams) and granulated sugar (1cup and 1/2cup) until creamy, about 4-5 minutes. Scrape the bowl few times.
  • Then gradually beat in full fat sour cream (1/2cup). Scrape the bowl to ensure all is well combined. Beat for 2-3 minutes, until pale in color.
  • On low speed, gradually add flour mixture alternating with egg mixture. Scrape the bowl few times. Beat till combined. Don't over mix.

How Color Cake Batter to make Monster Eye Cake Rounds

  • Divide the cake batter in half. Fold 1/4 cup of white/red jimmy sprinkles into 1st half of the cake batter.
    Next divide 2nd half of the batter into 1/3 and 2/3. Color 2/3 of the batter with electric green gel food color. And remaining 1/3 of cake batter with black food coloring.
    Spread batter with sprinkles covering about 2/3 of the rimmed baking sheet/pan (12x9inch). Then spread green batter covering about 2/3 of the remaining area. Then spread black cake batter into unfilled area of the cake pan/sheet.
    Bake in the preheated oven at 340F for 18-20, until toothpick inserted in the center comes out clean.
    Invert hot cake onto a surface lined with wax paper. Peel off the parchment. Let it cool for 20 minutes, then invert it again onto a cutting board. Peel off the wax paper.

Shape Monster Eye Cake Rounds

  • Use 3 round cutters : 2inch, 3/4inch, 3/8inch to cut out pieces of cooled cake batter.
    1st cut out rounds from the cake with sprinkles, using a 2 inch round cutter. Transfer rounds on on a freezer safe tray.
    Then with a smaller cutter (3/4inch) cut out rounds from the bright green cake. Using the
    same cutter (3/4inch) also cut out centers from cake rounds with sprinkles. Replace them with green rounds.
    Lastly, using the smallest round cutter (3/8inch) cut out black cakes sections. Cut outs will look like long cylinders. Using the same cutter (3/8inch) also cut out centers
    from the green rounds. Replace them with black cut outs.
    Use a wooden spoon to push the black cakes cut out of a small cutter.
    Freeze monster eye cakes covered with plastic wrap for 2-4 hours until frozen solid.

Monster Eye Surprise Inside Loaf Cake

  • Spray a loaf pan with a nonstick spray and line it with parchment paper. Preheat oven to 330F.
  • Prepare another Monster Eye Cake Rounds – Cake Batter. Color it with bright purple food coloring.
  • Take frozen monster eye cake rounds out of the freezer. Press the rounds together to form a long log.
  • Spread about 1/4 – to 1/3 of the cake batter on the bottom of the loaf pan.
  • Place the monster eye cake log onto the purple cake batter into a loaf pan.
  • Pour remaining cake batter into the pan, covering the log.
  • Bake in the preheated oven at 330F for 60-75 minutes. Until toothpick inserted in the purple cake batter comes out clean. Cover the loaf pan halfway to prevent over browning.
  • Let the cake cool in the pan for 10 minutes. Then remove it from the pan and transfer onto a cooling rack and let cool completely.

Decorate Cake with Buttercream

  • I used Swiss Buttercream to decorate the outside of the cake.
    If needed (if cake sides are too brown) trim the sides. Then crumb-coat the cake with buttercream. Refrigerate until firm. Then frost the cake with orange buttercream. Use a cake decorating spatula to smooth the buttercream and create texture. Alternatively you can use a grass piping tip.
    Pipe white eyes onto the cake. And to make the pupils use edible black pearls. Refrigerate for up to 4 days, covered. Let come to room temperature before serving.

      they sell a lot of geometric cutters online. ATECO plain edge geometric cutters are great. If you look in my amazon shop they are listed among the favorite cutters.

    1. Ginette, you can find small geometric cutters online. Ateco has a good assortment and for really tiny ones you can look at sculpey brand, they sell tiny cutters.
