Harry Potter Banana Whoopie Pies

 

I don’t know about you but I always  seem to have extra bananas to bake with.  Overripe bananas  are perfect for baking. Banana makes cakes and cookies most and soft and just pure delicious. Today I wanted to share with a fun twist on a traditional Whoopie Pies : Harry Potter Banana Whoopie Pies.

Banana Whoopie Pies (makes 6 sandwiches, recipe can be doubled)

1 cup 1/4cup all purpose flour
1/4tsp baking soda
1/4tsp baking powder
1/4tsp salt
1/2 generous cup mashed banana, about 2 small or 1 large banana
1/4 buttermilk ( if you don’t have buttermilk on hand make your own : to 1/4 cup whole milk add 1/2tsp white distilled vinegar, let sit for 5 minutes, then gently stir and use in the recipe as directed)
4 tbl room temperature unsalted butter
1/4cup granulated sugar
3tbl brown sugar
1egg
1tsp vanilla extract

Food Coloring – orange and black

Preheat oven to 350F.
Combine dry ingredients together – add baking powder, baking soda, salt to flour, sift or stir well with a whisk, set aside.
Mash the banana really well, stir in buttermilk, set aside.

Beat butter and sugars until creamy and fluffy, add egg beat until combined, add vanilla extract. Scrape the bowl as needed.

Gradually, add flour mixture into the butter mixture, stir on low speed, add 1/2 of the buttermilk, alternating the two. Scrape the bowl and stir until combined.
Measure 3 tbl and 2 tbl of the batter.
Color 3tbl portion with black food coloring and 2tbl portion with orange food coloring.
Fill 2 sandwich bags with orang and black batter, set aside.
Fill a piping bag with remaining batter.
Prepare whoopie pie pan, spray it with non stick spray.
Pipe batter onto the prepared pan.
Smooth the tops with the back of the spoon and some water.
Cut the corners on sandwich bag with orange batter and pipe lightning bolt pattern on 6 unbaked whoopie pie rounds. Continue with black batter, piping the glasses.
Bake at 350F for about 10-12 minutes or until toothpick inserted in the center comes out clean.
Cool in the pan for couple minutes.
Transfer onto a cooling rack to cool completely.

Fill the Whoopie Pies with you favorite frosting/buttercream.
Using a piping bag fitted with a star tip, or use a round tip, pipe the filling onto the bottom portion of the whoopie pie. Place the top portion onto the buttercream. Store in the airtight container in the fridge until ready to use. Bring to room temperature before serving.
