Raspberry Tiramisu Brioche

 
Yesterday evening I spent in the garden, weeding and thinning red beets and radishes,  then at the dusk we planted some more flowers, and vegetables, starting them inside, cucumber, zucchinis, squash. By the time we were finished it was dark out and I was exhausted and I was ready to make a sandwich I had on my mind for a while.
I love fruit and so why not a sweet fruit sandwich.  I always have some berries in the freezer and mascarpone cheese became a staple in my kitchen, plus  it doesn’t hurt to have a great friend who make delicious  Brioche Buns too, as I had some left in the freezer. Let’s make the Brioche Sandwich
 

 

 Raspberry Tiramisu Brioche Sandwich ( 2 sandwiches, these are pretty filling so you can make 4 servings, cutting each sandwich in half )

1cup frozen raspberries
2tbl Turbinado sugar or honey
1/2cup water
1tbl Limoncello Liqueur
1/2cup mascarpone cheese
1/4tsp cinnamon
2tsp honey
grated dark chocolate for garnish
fresh raspberries for garnish

 

Cook raspberries with sugar/honey and water, until very soft, add liqueur and cook for 2 more minutes. Strain raspberries through a fine mesh sieve. 
In a small dish stir together mascarpone, cinnamon and honey, set aside
Have grated chocolate ready.
Cut the brioche buns in half, generously spoon raspberry mixture on each cut half. Spread generous amount of mascrapone cheese on one bun, sprinkle grated chocolate on the top and add fresh raspberries.Put the top bun on the top and enjoy.
