Tiramisu Cookies

 

Today I decided to share with you Tiramisu Cookies,they are a result of my  experiment. Don’t you just love experiments that turn out  smelling delicious, tasting even better and looking pretty!
I bought some mascarpone cheese, which I love very  much; actually  I wanted to make traditional Tiramisu, but decided to experiment with it.
I’m a big fan of linzer cookies so I decided to take that and create the look but make them coffee flavored filled with smooth butter filling..mascarpone cheese. I added little cinnamon, you know I’m addicted to that stuff, right? So if you are not a cinnamon fan, just omit cinnamon in your filling, otherwise come on over and enjoy.

TIRAMISU  COOKIES

 
Coffee Cookie Dough
1 stick butter (113grams)
 
2 egg yolks
 
85 grams powdered sugar
240 gram all purpose flour
20 grams ground almonds or walnuts
 1 1/2 tbl warm heavy cream
1tbl espresso powder

 

In a small container, combine 1 1/2 tbl warm heavy cream and 1tbl espresso powder. Let dissolve.
In a large bowl, combine flour, powdered sugar, ground almonds. Add room temperature butter, egg yolks, dissolved coffee.
Using your hands make the dough, wrap it in the plastic wrap and refrigerate for at least an hour.
 
BAKE COOKIES
 
oven 350F(176C)
Line cookie sheets with parchment paper.
 Lightly flour your work surface, roll the cookie dough into about 3mm(little less then 1/8 inch).It should be rather easy to work with this dough. Run a spatula under the rolled  dough to make it easier to remove cut outs. Cut as many small round cookies as you can, transfer them onto your cookie sheets.Cut out small heart centers in half of the cookies.
Bake for about 6-7 minutes, until edges just begin to get lightly golden, be careful not to burn them.

Remove from the oven, let cool for 5 minutes, remove from the cookies sheets onto the cooling rack.Let cool completely before filling

SANDWICH COOKIES

Filling
1cup mascarpone cheese
1/4tsp cinnamon
2tbl powdered sugar, or to taste

Combine all the ingredients in a small dish.

Sandwich cookies together and enjoy.

I stored these in the fridge and we enjoyed them day later.They were perfect.

You can fill these cookies with chocolate ganache  as well.
Totally scrumptious.

Ganache Filling
1/2 cup heavy cream
3/4 cup  bittersweet chocolate

 

Place chocolate into a medium size heat proof bowl, glass or stainless steel bowl works great.
Heat heavy cream until it get hot, once you see little bubble former around the edges, pour it over the chocolate,
cover and let sit for about 2 minutes. Using a wooden spoon stir the mixture until all the chocolate is incorporated, you should get a thick shiny chocolaty mixture.
Let cool completely, best for several hours.
