This is a refreshing salad, filled with vitamins and I added few other flavors to make it more interesting and appealing. I don’t add any sugar to the salad…well..why would I right? We have caramel to fill that spot. But seriously, I don’t usually add anything to this salad but today I thought it would be nice to dress it up a little so I used about 2 tbl cinnamon mascarpone cheese and home made caramel, left over from my Pumpkin Spice Caramel Latte Cupcakes, if you haven’t seen those, pictures along with the recipe can be found here.
Apple Caramel Salad (serves 2)
1 large apple
2 large carrots
juice of half lemon
optional – 4 tbl mascarpone cheese flavored with cinnamon
optional – about 6 tbl caramel
optional – 2 tbl Blanched and chopped almonds
Peel apple and carrots and grate them, add lemon juice. Place in a bowl and top with mascarpone cheese and drizzle caramel on the top.Sprinkle with almonds.
Serve and enjoy.
