Strawberry Whoopie Pies

It's a strawberry season!
I made delicious and super cute Strawberry Whoopie Pies.



STRAWBERRY WHOOPIE PIES (makes 6, recipe can be doubled)

1/2 cup granulated sugar
4 tbl room temperature butter
1 large egg
1tsp vanilla extract
1 cup  flour
3/4tsp baking powder
1/4tsp salt
1/2cup buttermilk( if you don't have buttermilk on hand make your own : to 1/2 cup whole milk add 1/2tsp white distilled vinegar, let sit for 5 minutes, then gently stir and use in the recipe as directed)
Food Coloring - red, pink, leaf green, yellow)
Preheat oven to 350F
Beat butter and sugar until creamy and fluffy, add egg and vanilla, beat until doubled in volume and creamy, pale in color.
Sift flour, baking powder and salt.
Add 1/2 of the flour mixture into the butter mixture, stir on low speed, add 1/2 of the buttermilk, then add rest of the flour, stir and add rest of the buttermilk.
Divide batter into 3 portions. Color largest portions wit red and pink. Second largest with green and small portion with yellow.
Fill the piping bags with the batter. Cut the corner the red piping bag and start piping the strawberry shape on the parchment paper, using a the template. Then pipe the leaves with green and seeds with yellow.

Bake at 350F for 12-14 minutes.
Let cool on the baking sheet for couple minutes then transfer to a cooling rack. Cook completely before filling.

STRAWBERRY FILLING
1/2 cup heavy cream
1/2 cup mascarpone cheese
1 cup powdered sugar(use more if desired)
1tsp vanilla
1 1/2 cups diced fresh strawberries

Beat heavy cream, once soft peaks are formed gradually add powdered sugar, then gradually add mascarpone, beat well, add vanilla and then stir in diced strawberries.
