Roasted Heart Potatoes with Rosemary


 
My love for all things potatoes is going strong, just as I've shared with you last year and year before that. It's simple, we love potatoes. We buy them in 50lb bags. Potatoes we usually get are called Chef Potatoes, our local farmer's market carries them.
Today I'm making Roasted Potatoes for Valentine's day. You may have seen these before as I made them few years back. Today I changed the recipe just a tiny bit. I added rosemary.
I also teamed with my you tube friend Steph from Chef Stef Channel. Steph made delicious and really easy to make  Chicken with Creamy Tomato Sauce. Perfect to go with the potatoes.



ROASTED POTATOES RECIPE

6 large potatoes(about 2 pounds for 4 servings), peeled sliced
1/4cup olive oil
1 to 2tsp kosher salt
freshly ground pepper
2tsp caraway seeds
2tsp fresh rosemary, chopped, or 1tsp dry
1/2tsp paprika(optional)

Preheat oven to 400F.
Line baking sheet with aluminum foil, spray with non-stick spray or brush with oil.
Fill a pot with about 1quart -2quarts of water, add 1tbl salt, bring to boil.
In the meantime peel potatoes, slice them, using a small metal cookie cutter cut out as many hearts as you can. Put hearts and scraps into 2 bowls with water, to prevent potatoes from browning before you cook them.
Put the potatoes into the boiling salted water, cook potatoes in simmering water for 3-4 minutes, drain potatoes and let cool for 15 minutes.
Combine all the ingredients for the marinade : olive oil, salt, Caraway seed, pepper, chopped rosemary, paprika(optional)
Pour marinade over potatoes, stir and let sit for 5 minutes.
Spread marinated potatoes evenly onto the baking sheet.
Roast them for 20-25 minutes, in halftime using an off set silicone spatula carefully turn the potatoes (don't forget to use oven mittens when handling hot baking sheet!).
If your oven has a broiler, broil potatoes for additional 5 minutes or until they are golden.
