Apple Caramel Cupcakes & Coton Colors Giveaway



The Happy Everything Cookbook  is a title of a new cookbook by Coton Colors.
Coton Colors a company based in Tallahassee, Florida, offering beautiful hand-crafted pottery, variety of gifts and decor.
When authors Laura Johnson and Susan Murray sat down to talk about the makings of the cookbook they had one thing in mind. Celebrations of life, happy, sans stress, easy to make recipes, to be enjoyed by family and friends, all year round.
That is exactly the vibe that came through to me just flipping through the pages when I first held the book in my hands.
Few days ago when I first spotted leaves falling down from our back yard trees, realizing Fall is definitely upon us now, I decided to make Fresh Apple Cake with Caramel Icing from the Happy Everything Cookbook. Apple cake sounds like a perfect Fall dessert. It also helps that I love apples. I followed the recipe exactly, well almost. As you know it is just 2 of us in the house so I din't feel the need for a big cake, just something small to nibble on. So I turned the cake recipe  into cupcakes. I also halved the recipe, with no problems, getting about 15 cupcakes out of the batter.
Cupcakes turned out quite delicious, even without the icing. If you have a sweet tooth, brown sugar icing will really put these over the top. Making them an excellent choice for breakfast as well as special celebration. They are moist and I love the  addition of nuts.
I have to say, being an avid baker I also enjoyed the ease of preparation, everything is mixed by hand and even an oven is not turned on until  you put the cake in the oven.




Apple Cake (2 -9 inch round cakes)


1 1/2 vegetable oil
2cups sugar
3eggs, lightly beaten
3cups red delicious apples, peeled, cored & coarsely chopped
1cup pecans, chopped
3cups flour
1tsp salt
1tsp baking soda
2tsp vanilla extract

Caramel Icing
1stick butter
1cup light brown sugar
1/4 cup evaporated milk
1tsp vanilla extract
additional pecans for garnish

  • Grease and flour 2 9 inch cake pans, set aside
  • In a large bowl, stir together sugar, oil, eggs, apples and pecans.
  • Into a medium bowl sift together flour, salt, baking soda. Repeat sifting dry ingredients 2 more times.
  • Gradually add dry ingredients into the apple mixture. Stir by hand,just until combined. Add vanilla and stir.
  • Divide batter into prepare cake pans.
  • Place both cake on the middle rack into the cold oven.
  • Set oven to 325F and bake for 45 minutes. or until middle is set.
  • Remove from the oven and cool on wire rack.
  • Cool cook completely before icing.
  • In the meantime you  can prepare the icing.
  • In a small saucepan, stir together butter and brown sugar. Cook on medium heat, just until sugar is dissolved. 
  • Add evaporated milk and bring the mixture to boil.
  • Remove from the heat and stir in vanilla extract.
  •  Let the icing cool to room temperature before icing the cake.
  •  Use some of the icing to fill the cakes, simply spread the icing between 2 cake layers,  pour the remaining icing on top of the top layer. For festive look, let the icing drip down the sides. Decorate the  top of the cake with pecans.
  • This recipe can be also easily doubled if need.
