Triple Chocolate Brownies Cookies

Almost all the recipes on my blog require a preheated oven and lately I’ve been experimenting with vegan and gluten-free baking. So far I can’t complain, but from time to time you’ll see me whipping up pounds of butter and dozen of eggs in my goodies.
I’m so honored to be here today. When Hani asked me to write a guest post for her I did a happy dance. She’s an amazing baker, has lots tons of patience to decorate the most beautiful cookies and she’s one of the sweetest food bloggers I know. I didn’t want to step out of Hani’s blog theme and although I have two left hands when it comes to decorating cookies, I brought you some triple chocolate cookies today.
I’m pretty sure everyone has seen “Pretty Woman” the movie, by now. I have seen it so many times I lost count. Do you remember the scene after she goes shopping and spends an obscene amount of money she returns to the boutique that the sale-woman treated her bad the day before and tells her ” You did a big mistake …. BIG …. HUGE!!
I did a  BIG, HUGE mistake as well with these cookies. And no, I’m not talking about taste. I’m talking about quantity! If only I knew how good they turned out I would have doubled, no tripled the recipe from the beginning. They are soft, fudge-y, chocolate-y with just the right amount of sweetness and addictive! It’s just like eating a brownie but in a cookie form.
Unsweetened cocoa powder, 100% unsweetened chocolate and dark chocolate chips blends so well in these bites of chocolate heaven.They are fairly easy to make, although they do require some chilling time. I haven’t tried the speedy way by putting the dough in the freezer, but I think it will work just as well as long as you keep the cookie dough just until it’s hard enough to handle.
 
 

 

 
 
 
 
Triple Chocolate Brownie Cookies
Ingredients
6 TBSP butter roughly chopped
2 oz 100% unsweetened chocolate
1 cups sugar
2 eggs room temperature
3/4 cup ( 90 grams) all-purpose flour
1/4 cup (20 grams) unsweetened cocoa
1 TSP (4 grams) baking powder
pinch of salt
3/4 cup dark chocolate chips
Directions
In a small saucepan, over low heat melt butter and chocolate. Set aside and leave to cool completely.
When cooled transfer to a mixing bowl. With the paddle attachment on start mixing slowly adding the sugar and eggs, one by one. Beat until combined and smooth.
In another bowl sift together the flour, cocoa, baking powder and salt. Slowly add them to the wet mixture.
With a spatula mix in the chocolate chips.
Cover and refrigerate about 2 hours until the dough is easy to handle.
Preheat the oven to 350F.Grease two baking sheets or line them with parchment paper.
With an ice-cream scoop or a tablespoon drop cookie dough on prepare baking sheets 2 inch apart. Bake in preheated oven for 8-10 minutes until the edges are set and top is slightly cracked.  Cool at least 10 minutes on the baking sheets before removing them.
