Red Velvet Cupcakes
So as for those who are looking for something sweet toothed, today I will share a recipe for yummy Red Velvet Cupcakes.
1/2 cup buttermilk or sour cream
Bake Cupcakes
In the bowl of electric mixer, beat butter with sugar until doubled in volume and fluffy, add egg and egg yolk, one at a time, beat until well mixed, add vanilla extract.
In a small dish, using a fork combine buttermilk and red food coloring.
In 3 additions, starting and ending with flour, add Flour and Buttermilk Mixture into the butter mixture.Beating on low speed until incorporated.
In a small cup combine vinegar and baking soda, let the mixture fizz(it will be little foamy) and then at once fold it into the batter.
Fill your lined muffin pan, work quickly, smooth the tops with back of the spoon or spatula.
Bake in preheated oven at 350F for about 18-23 minutes, until toothpick comes out clean.
Rotate the muffin pan in half way of baking time.
Once done, let cupcakes cool in the pan for about 5minutes, then remove onto the cooling rack and cool completely.
Cream Cheese Frosting
1package cream cheese(226grams)
1/4 stick butter at room temperature(1 stick=114grams, 1/4 stick-30grams)
2tbl heavy cream
1tbl Honey
1/2 cup-2cups powdered sugar to taste( If you prefer sweet icing use more sugar, I don’t like desserts too be too sweet 🙂
1 tsp Vanilla extract
1-2 tbl heavy cream
Beat cream cheese until smooth, add room temperature butter and beat until smooth and well combined, add honey and powdered sugar. Taste. Add more sugar if desired. Beat in heavy cream and vanilla extract.
Frost Cupcakes
If using blue frosting details like in the picture. Take about 1/2 cup of icing and color it with blue food coloring.
Frost cupcake with a large star tip with white cream cheese icing and then add small stars using blue cream cheese.
