I love graham crackers and few days ago I was thinking of making these delicious home made treats again. Usually I make them into rectangles but I decided to change it up a little, using a round cutter and a small Bunny Cutter to create an imprint for the Easter Festivities. I think they turned out cute and are so good, I've eaten way too many already. 

Graham Crackers
2 1/2 cups whole wheat pastry flour + more for dusting
1/2c quick oats
1/2 tsp salt
1tsp baking soda
2tsp cinnamon
1cup butter, room temperature
3/4 cup light brown sugar
3tbl honey

Preheat oven to 350F
 In a clean large bowl combine together flour, oats, cinnamon, baking soda and salt, set aside

Using a paddle attachment beat butter with sugar and honey until doubled in volume and fluffy, about 3 minutes, scrape the sides of the mixing bowl as needed.
Add the flour mixture into the butter mixture in 3 additions, until the dough if formed. Turn out the dough onto a lightly floured surface and form a ball,knead a little if needed, divide in half.
You will be working with one half of the dough at at time.
Line your working surface with  parchment paper, dust gently with flour, place the dough  in the middle of the parchment paper and place another piece of parchment paper on the top.
At this point I place one painter's stick on each side
 Painter's sticks - I use these as  rolling pin thickness guides
Level 1- one stick on each side,for linzer and honey cookies and graham cookies
Roll out the dough to the thickness of the painter's stick, if you prefer you can go thinner without using the stick as guides.
Cut out as many crackers using a round cookie cutter as you can, Gently lift them up and place them on a parchment lined cookie sheet. Continue with the rest of the dough.
Using a fork pierce all the crackers and once you've done that take a small bunny cutter and make a imprint, almost like you are trying to cut it out but leave it just as it is.
Chill the cookies in the freezer until firm, about 10 minutes.
Bake for 8-9 minutes, rotating the sheet in the half way.

Let cool for 10 minutes on the baking sheet and then remove and cool completely. Enjoy alone, with a cup of milk, make the s'mores. These are delicious, really I mean it!

Tip: These would make a great snack for kids or to take to work, they are sure to please a large crowd.

  9. Thanks for the recipe! I'm baking them now. I had a cute linzer cookie cutter that I used that has interchangable inserts. I used the flower & teddy bear (to send to my little sister). Thanks again.
