Lime Ginger Grilled Sweet Potatoes

 

A friend of mine gave me sweet potatoes last month, they were sitting in the box and I finally decided to use them! I’m not big on sweet potatoes with brown sugar, and I know many people love those, just not me.A friend of mine recommended fries, which I’m going to try next time around, but last night I felt like grilling. No matter it was freezing out and our grill was leisurely sitting on the porch, all bundled up under the grill cover.
 
I dressed potatoes up with little lime zest and freshly grated ginger.Did you say yum?! That’s right, it was one appetizing sweet potato.
 
Grilled potato slices made it to the plate, I quickly took the picture and a few moments later there were gone. Grilled potato skin was so delicious and crunchy,  lime zest and ginger added the right amount of kick. I absolutely loved these.
 
If you are looking for a slightly different sweet potatoes, these would be your best pick.
Try them, I  guarantee you’ll love them.
 
 
 
Lime Ginger Grilled Sweet Potatoes
4 sweet potatoes, unpeeled
Kosher Salt
2 1/2 teaspoons finely grated lime zest
1tsp freshly grated ginger
1/4 cup olive oil
Freshly ground pepper
1/4 cup finely chopped fresh parsley
1tsp dry rosemary
 
Place the  unpeeled potatoes in to a pot with water, bring the water to boil and cook  potatoes until for tender. Let them cool. Cut potatoes in half  and lenghtwise into about 8 slices per potato. You can also cook potatoes day ahead and, cover and store in the fridge.
 
Start the grill on medium, or use a cast iron grill pan if you have one, on medium heat.
 
Lime Ginger Mixture
In a small cup combine parsley, lemon zest, freshly grated ginger, 2tsp salt and 2tbl oil,  set aside.
 
Using left over olive oil, brush each slice with oil, season with salt and pepper, brush and season all the sides.Sprinkle 1tsp rosemary on potatoes.
Grill slices until cooked through , about 2-3 minutes on each side, turn pieces carefully using kitchen tongs , grill even the skin (you’ll find out later it is the best part).
 
 
Once cooked, remove from the grill, onto a plate, brush with the Lime Ginger Mixture and serve.

  1. you make anything looks so good and mouthwatering! Never thought to pair it with lime! Normally i just bake it or grill and and eat it on its own..lol!
