Red Wine Poached Apples

2 Cups Red Wine
2 Cups water
1 1/3 cup  sugar
4 Large Apples
 
Flavorings : 3 tsp whole cloves, one lemon half, one half split vanilla bean, 2-3 star anise, stick of cinnamon
 
Heat water, wine and sugar to warm, until sugar is dissolved. Add  your flavorings and bring to very low boil.
Slide in apples and cover with parchment paper. Just cut out a round piece of parchment with a small hole in the center. We are doing this to ensure even cooking and in our case also even colorization. Red color of the wine will turn apple burgundy color.
Simmer the apples until cooked through, depending on the size of the apples it will take somewhere between 15 to 25 minutes. You know they are done when you can easily cut in them with a knife, but you want them to be still firm, not mushy.
Remove from heat. Serve warm or cold.
To the warm liquid you can add raisins, or sour cherries…those are really yummy as they soak up all the flavors.
 
Actually we make a drink called Cooked Wine, similar to the pouching solution, the only difference is that we don’t boil it, we remove it from heat just before boil. It is so yummy, and also works great when you just feel you are getting a cold. It really warms you up.
