I had so much going on today..almost didn't make to my daily Apple a Day project.
I will share with you a really easy and delicious breakfast treat. Fritatta Muffins.A perfect way to start a new day.Filled with proteins, healthy fats and hmhmhm flavors.

Apple Cheese Onion Mushroom Almond Frittata Muffins ( 8 muffins)
1/4 cup milk
Small onion, finally chopped
4 button mushrooms, chopped
2tbl chopped parsley
about 1/2 tsp freshly grated nutmeg, you can use already ground one as well
1/2cup shredded Cheese, I used parmesan, cheddar and mozarella mix
1tbl olive oil
1/2 tbl butter
1/4 cup chopped almonds
one small green pepper, washed and chopped into small cubes
salt and pepper to season
1 large apple,washed, cored and cubed fairly fine
Preheat oven to 365F, butter muffin pan
Using a medium size skillet, heat olive oil and sautee onions until they start to get little brown.
Chop mushroom and pepper, season with pepper and salt and add to the skillet, add 1/2tbl butter and stir, sautee for about 3 minutes, add chopped apple, season with nutmeg and stir, cook for about 2 minutes.
In the mean time, in a medium size bowl, lightly beat eggs and milk, add chopped parsley, cheese and almonds.
Remove apple mixture from heat and scrape it into the egg mixture, stir, taste and season if desired.
Spoon the mixture into the prepared buttered muffin pan. You want the eggs to fill the muffing cavity almost to the top.
Bake for about 15-17 minutes, until the egg mixture puffs and is just set in the center.Remove muffins from the pan and serve. These can also be refrigerated, you can reheat them in the microwave.
