Cheese Donuts

At 7am I found myself putting on my old running sneakers and heading out for my morning run, sky was clear blue  with occasional cloud surfing the blue pool, I kept starring at it. Morning breeze brushing away sleepiness from my body. It was a good run,  I did about 5 miles.
Later  today I went to check out several garage sales in the area, always looking for new props, but today wasn’t a good hunt, I got nothing…well nothing ???…I made these delicious donuts so I guess that counts for something right ! ♥♥♥
Hope you are enjoying your weekend.

Recipe
250 grams farmer’s cheese ( How To Make Farmer’s Cheese)
300 grams all purpose flour
2 1/4 tsp  baking powder
2 Tbl powdered sugar
pinch of salt
2 egg yolks
1 egg
2Tbl dark rum
1tsp vanilla extract
zest from one lemon
oil for frying ( approximately 1 inch of oil in the pan)

1/2 cup powdered sugar
1/4 tsp cinnamom (optional)

Sift flour, baking powder, powdered sugar and salt in the medium size bowl, add farmer’s cheese, egg yolks, egg, lemon zest, vanilla extract and  rum and work all the ingredients into a dough, it  will be somewhat dense.
Using a rolling pin roll the dough to approximately 1/2 inch. Using a 1 Tbl measure make balls from the dough. To make ball, roll  1tbl of dough between the palms of your hands. Cover the balls with kitchen towel to prevent drying out.

Heat the oil in the pan or a deep skillet(I used a small pan and repeated cooking process 3 times), and slowly taking care not to splatter oil on yourself, immerse several donuts into the oil, using a heat resistant kitchen tool  turn the donuts in the oil, watch carefully they will brown really fast. You need to cook these in a  hot oil.
Once browned all over, remove from the pan and place them on the baking sheet lined with paper towel.
Repeat with the rest of the donuts.
In a separate bowl mix 1/2 powdered sugar and 1/4 cinnamon, add cooked  still warm donuts and toss until coated with sugar.

Serving Suggestion
These would be also wonderful with your favorite jam on the side.

Today I enjoyed few with a glass of milk. Delicious afternoon treat.
