Sweet Bread Cheese Fruit Tartlets

Yum, I just had the last 2 fruit tartlets. I’m addicted to these cute little treats.:-)Every time I make these, it takes me to my grandmother’s house, the aroma and memories always kick in. I’ve been trying to perfect these for so long and I’m proud to say I’m slowly progressing. There is always something new that I learn in the process.

To make these tartlets I used my Sweet Bread dough for the base dough – recipe, filling included homemade farmer’s cheese – recipe, and fresh fruit. I used fresh blueberries, pitted cherries, sliced nectarines and strawberries. Quite frankly I can’t decide which one was my favorite. They were really scrumptious.You might remember Apricot Tartlets I made a while back. They are similar, but without the addition of cheese.I really like the added cheese.

for the Cheese filling, I used about a 1tsp for each cavity.
about 1 1/2 cups Farmer’s or Ricotta cheese, sugar or honey to taste,add one egg yolk, combine, add pinch of cinnamon to taste.

I wonder if I ever get tired of these…hm I guess not, never actually. I love them so much, they remind me of childhood and days spent at my grandmother’s.
